Christmas Island cuisine

As of 2009, the island had just 1,200 residents - 65% Chinese Malaysians 20% Malaysian Malays and 15% of residents are of European descent. There are also small Malaysian Indian and Eurasian communities on the island.〔(''No paradise on Christmas Island'' ) by Paige Taylor (The Australian, 25 May 2009)〕 This figure also does not include the almost 600 people who work in or in association with the Christmas Island Immigration Reception and Processing Centre.
There are an additional 2,000+ people living at the Christmas Island Immigration Reception and Processing Centre. Their meals are flown in by the Australian Government via operator Serco.〔
